5 Time-Saving Tips to Help You Eat Well

From frozen foods to meatless meals, here are five time-saving strategies to help you prepare nutritious meals quickly and easily.

With all the pressures on our time, many of us cut corners. We resort to fast food, restaurant take-out, and frozen entrées that may be loaded with salt, fat, and calories. But it doesn’t have to be that way.

With a little advance thought and planning, you can prepare nutrition-packed meals even on the busiest of days. Here, then, are some of our favorite time-saving strategies.

Nutrition Tip 1 — Shop the Freezer Aisle
Frozen vegetables are great timesavers. They can be prepared in a few minutes in the microwave or quickly steamed in an inch or two of water. For the best nutritional value, choose frozen vegetables without added sauces and seasonings. You can even select some frozen entrées — if you peruse the nutrition labels carefully before purchasing. Look for products with less than 4 g of saturated fat and no more than 400–600 mg of sodium.

Nutrition Tip 2 — Portion and Prepare Ahead of Time
Buy uncooked chicken breasts, fish, or lean meat at the supermarket. When you get home, unpack and repackage it in freezer bags in the portions you need for one meal. Then add marinade and freeze — be sure to squeeze out as much air as possible from the bag to prevent freezer burn. Label and date the items, too. The night before you want to serve the protein, put the bag in the refrigerator to thaw. By dinnertime the next day, all you’ll need to do is grill or broil the entrée.

Nutrition Tip 3 — Cook Once, Eat Twice
When you’re cooking, make extra for another dinner. It doesn’t take much effort to double a recipe for spaghetti sauce, chili, a casserole, stew, or soup. Freeze the extras in the desired serving size.

Nutrition Tip 4 — Make Eggs the Center of Attention
Eggs are quick and easy to prepare. Try using eggs or egg substitutes as a main dish at dinner. For instance, create an omelet with low-fat cheese, leftover chili, or Chinese food. Use one whole egg and one to two egg whites to get the volume of two eggs for the cholesterol content of just one.

Nutrition Tip 5 — Prepare a Meatless Meal
Dinner does not always have to include meat. Instead, try topping a baked potato with a frozen vegetable, beans, and low-fat cheese. You can quickly prepare white and sweet potatoes in the microwave oven. If you prefer the flavor of potatoes baked in a regular oven, cook them halfway in the microwave and then finish them off in the oven.

LISAS NOTE: The only point that I will make in slight caveat is with Nutrition Tip 5.  If you are eating a low glycemic diet, eating low carb or are a diabetic you should NOT eat a potato as a meal. Yes eat a meatless meal, just make it a salad or all steamed vegetables with other protein choices, such as legumes.

Let My Fingers Do the Walking!

Where on earth am I going to find a Derby hat much less more than one in central Florida?  And then what color?

Before I let my fingers do the walking around the world wide web as my shopping grounds, I had to do my research.  First, just exactly what kind of hat did the ladies REALLY wear?  What do the guys wear?  Believe it or not there is right and wrong apparel for Derby.  Tradition states that certain rules must be followed.  Follow these steps for dressing right for Derby Day.

STEP 1:  Choose your hat (ladies only, of course). Hats go with the Derby like the frosting on a birthday cake. It should be large-brimmed, feminine and frilly (think 18th-century France), and worn low on the brow tilted slightly to one side. Design the rest of your outfit around the hat.

STEP 2:  First it is spring, not a cocktail party.  So no cocktail dresses at the races … think Easter.  Think Easter bonnets. And believe it or not, it is appropriate for the men to wear Seersucker Suits.  Do they make those anymore?  The answer, YES!  Trust me right or not … Vic will NOT be in seersucker!

STEP 3:  Dress business casual for  many venues at Churchill Downs.  This means blazers and jackets with collared shirts and ties for men, dresses and pantsuits for ladies. Denim, shorts and tennis shoes, torn or frayed clothing aren’t welcome in here.

Believe me these are the cliff notes.  After scouring picture after picture to get the look and feel of what we were about to embark upon I think I finally got a grasp of how to SHOP!

Chicken eggs are good … now long?

Well its that time of year when eggs are being dyed and deviled!  The conversation has come up … just how long is an egg good?  I thought I had the answer but found alot more information on Wiki.com

Here is what they found from their various contributors:

  • Eggs can remain edible for even longer than a month, but freshness (egg yolk that sits firm and high, and a thick viscous egg white) will be noticeably less after two weeks.If eggs start out as Grade AA, they remain AA for only two weeks if properly refrigerated. After that, they’ll be Grade A for another 2 weeks.
  • Here is a true test of freshness: Get a bowl of cold water. Put the whole egg in the water. If it sinks, it’s fresh; if it floats to the top, it is old. It will kind of lay almost on its side. You can see the age of it by how much it floats. It’s a good idea to do this test before selling any eggs if you suspect they are older than two weeks.However, by putting the eggs in water, you wash away the bloom from the egg, a protective layering that prevents bacteria from entering the egg. Therefore, unless you are not expecting to keep the eggs for very long, you should not put them in water. If you must wash the eggs, use HOT running water.
  • Farmers have 30 days from the day an egg is laid to get it to stores. Then, the stores have another 30 days to sell the eggs. The USDA recommends a maximum of 5 weeks in your refrigerator before you discard your eggs. What does this all boil down to? On April 1, you could be eating an egg that was laid on Christmas.
  • Many eggs in the U.S. get to market within a few days of laying. If there is a USDA shield on the carton, it must have at least a Julian pack date. A use-by is not required, but if used, it must not be more than 45 days from packing. If the eggs are not distributed interstate, state laws will apply and are variable.
  • Keep in mind that farmers generally get their eggs to stores within a week, and both the “pack date” and “sell by” date are stamped onto the carton. The numbers run from 1-365, depending on the day of the year. Lastly, there is a big difference in taste between farm fresh eggs and week-old eggs. If you want the freshest eggs, you can buy from a local farmer.
  • There is an expiration date on the carton. If in doubt, put the egg in water. If it floats on its side, do not use it.

Eggs last about 4-5 weeks in your refrigerator. If you don’t know how long the egg has been in the refrigerator, fill a cup with water (enough to cover the egg), and put the egg in the cup. If the egg sinks to the bottom, it is still good to eat, but if the egg floats, it is bad and should be discarded.

This Birthday I Will Not Be At Home!

Vic and I celebrate our birthdays going somewhere.  Last year I stayed home and Vic chose Ireland.  So while we were driving to South Beach for the SoBe Food & Wine Festival in late February, he asked me where I wanted to go this year.  I had not even given it a thought!  He mentioned the Hershey Spa, since that was planned last year and we didn’t go.  I said no, but it was still on my list.  As we passed a billboard that was promoting John Fogarty on April 27th, Vic chimes in and says we could to see him for MY birthday.  NOPE! don’t think so…

That got me thinking and brainstorming just where I might want to go.  I remembered several years ago, Vic thought about going to the Kentucky Derby because his mother was born on May day, in Kentucky on Derby day.  That particular year Derby Day fell once again on her birthday.  Needless to say they didn’t go.  So, I said “well the Derby is on my list, not for this year since we haven’t planned a thing, but definitely on the list”.  And we carried on about other places never making a decision.

Cut to the Food & Wine Festival.  We were there with American Express BIO (By Invitation Only) group.  On Saturday evening we had a private dinner with Chef Michael Chiarello.  During dinner Vic was visiting with Dave and Debbie and I was visiting with Casey from Gainesville sitting next to me.  Towards the end of dinner, Vic leans over to me and says, “Guess where Dave and Debbie are going?”  ”The Kentucky Derby!”   Needless to say I wanted to know where Debbie was getting her hat!

On our way back to our room, Vic proceeds to tell me that he shared with Dave and Debbie that the Derby was on my Birthday Wish List.  During dinner Dave emailed his cousin to see if he could get 2 more tickets to the Derby.  I was shocked and excited at the possibility!

The next day we are at one of the Culinary Events and we see them.  Dave turns around and tells us that he just got an email back from his cousin that they have two tickets for us, if we are still interested!  I am stunned!  Now that is the Law of Attraction at work … in spades!

Needless to say the whirlwind began. HATS topped the list for sure! (no pun intended).  Not one but TWO.  One for The Oaks race which just happens to be on my birthday AND the color is PINK.  Why? Because all the fillies are racing and it benefits Breast Cancer Awareness.  And then there is the Derby Race … run for the roses … the fastest two minutes in sports racing!

So join me on my unexpected journey to Churchill Downs.

I Believe

A year ago today I lost my precious friend Cynthia.

Have you planted your Daffodil today?

The following story was published on MyDailyInsights Friday Story and got lots of responses.  It touched people where they were.  What they realized is that nothing changes unless you “plant your daffodil bulb” each day.  Here is some more food for thought:

Albert Einstein once said “The definition of insanity is doing the same thing over and over again and expecting different results”.

Are you doing nothing and expecting different results?  Thinking about it doesn’t make it happen?  What are you going to DO today, tomorrow and the day after tomorrow to create a difference in your future?

Plant a daffodil everyday!

THE DAFFODIL PRINCIPLE

Several times my daughter had telephoned to say, “Mother, you must come
to see the daffodils before they are over.”  I wanted to go, but it was a two-hour drive from Laguna to Lake Arrowhead “I will come next Tuesday”, I promised a little reluctantly on her third call.

Next Tuesday dawned cold and rainy. Still, I had promised, and reluctantly I drove there. When I finally walked into Carolyn’s house I was welcomed by the joyful sounds of happy children. I delightedly hugged and greeted my grandchildren.

“Forget the daffodils, Carolyn! The road is invisible in these clouds and fog, and there is nothing in the world except you and these children that I want to see badly enough to drive another inch!”

My daughter smiled calmly and said, “We drive in this all the time, Mother.”  ”Well, you won’t get me back on the road until it clears, and then I’m heading for home!” I assured her.

“But first we’re going to see the daffodils. It’s just a few blocks,” Carolyn said. “I’ll drive. I’m used to this.”

“Carolyn,” I said sternly, “please turn around.” “It’s all right, Mother, I promise. You will never forgive yourself if you miss this experience.”

After about twenty minutes, we turned onto a small gravel road and I saw a small church. On the far side of the church, I saw a hand lettered sign with an arrow that read, “Daffodil Garden.”  We got out of the car, each took a child’s hand, and I followed Carolyn down the path. Then, as we turned a corner, I looked up and gasped. Before me lay the most glorious sight.

It looked as though someone had taken a great vat of gold and poured it over the mountain peak and its surrounding slopes. The flowers were planted in majestic, swirling patterns, great ribbons and swaths of deep orange, creamy white, lemon yellow, salmon pink, and saffron and butter yellow. Each different-colored variety was planted in large groups so that it swirled and flowed like its own river with its own unique hue. There were five acres of flowers.

“Who did this?” I asked Carolyn.  ”Just one woman,” Carolyn answered. “She lives on the property. That’s her home.” Carolyn pointed to a well-kept A-frame house, small and modestly sitting in the midst of all that glory. We walked up to the house.

On the patio, we saw a poster. “Answers to the Questions I Know You Are Asking”, was the headline. The first answer was a simple one. “50,000 bulbs,” it read. The second answer was, “One at a time, by one woman. Two hands, two feet, and one brain.” The third answer was, “Began in 1958.”

For me, that moment was a life-changing experience. I thought of this woman whom I had never met, who, more than forty years before, had begun, one bulb at a time, to bring her vision of beauty and joy to an obscure mountaintop. Planting one bulb at a time, year after year, this unknown woman had forever changed the world in which she lived. One day at a time, she had created something of extraordinary magnificence, beauty, and inspiration. The principle her daffodil garden taught is one of the
greatest principles of celebration.

That is, learning to move toward our goals and desires one step at a time–often just one baby-step at time–and learning to love the doing, learning to use the accumulation of time. When we multiply tiny pieces of time with small increments of daily effort, we too will find we can accomplish magnificent things. We can change the world …

“It makes me sad in a way,” I admitted to Carolyn. “What might I have accomplished if I had thought of a wonderful goal thirty-five or forty years ago and had worked away at it ‘one bulb at a time’ through all those years? Just think what I might have been able to achieve!”

My daughter summed up the message of the day in her usual direct way. “Start tomorrow,” she said.

She was right. It’s so pointless to think of the lost hours of yesterdays. The way to make learning a lesson of celebration instead of a cause for regret is to only ask, “How can I put this to use today?”

Use the Daffodil Principle. Stop waiting…..

DEANES in Belfast

Our first dinner was at DEANES Restaurant, Michael Deanes flagship site and the only restaurant to receive a Michelin 1 Star rating in Belfast.

Michelin stars are awarded to restaurants offering the finest cooking, regardless of cuisine style.  Stars represent only what is on the plate.  They do not take into consideration interior decoration, service quality or table settings.

As our custom, when a restaurant offers a tasting menu paired with wine, we usually select it.  DEANES was no exception.  It is a great way to taste smaller portions of cuisine and wine.

Not only did we enjoy the tasting we discovered 2 cheeses from Ireland and witnessed love in bloom at the table next to us. More on that later.

We particularly loved the first pairing of Chilled gazpacho with crab & avocado paired with Sancerre Domaine Andre Dezat.

Now as we were waiting on our meat course we notice a gentleman 2 tables over being presented with the cheese selections for his Cheese Course.  Well we instantly decided that we would indulge after our meal was complete.

The meat tasting was Tapenade poached Lough Erne lamb & confit lamb belly, Pissaladière & artichoke barigoule and was a little disappointing I that for all the flavors on the plate there really wasn’t a “star”.  It was all beautifully cooked, just blaze’ in taste.

The next tasting course was Strawberry & watermelon soup, basil ice-cream which was quite delightful combinations of flavor and texture.  It was a nice palate cleanser for the chocolate dessert.

Valrhona chocolate & caramel tart, pistachio ice-cream & Amarena cherries was amazing in flavor and textures and paired with Fischer Trockenbeerenauslese sweet wine.  Excellent paring.

An now for the Cheese Course.  It was FABULOUS!  The two standouts were a smoked Knockanore from Waterford NI and Durrus from Lorck IE.  You will find those on one of my next Cheese Courses at home soon.

Our general consensus was that the kitchen had some issues with getting the food out in a timely manner.  Since this was on a Thursday night it wasn’t a full house.  Waiting 25 minutes between a few of the courses was a little weary.  Which since the Michelin Stars doesn’t have anything to do with service, that is something to be remembered.

Maven Missive: Foods to Eat Every Day
